The Easiest Beef Roast for Three Delicious Dinners

In this house, I always keep things simple—especially when it comes to meal prep. One of my go-to dishes that I make at least once a month is a classic beef roast. Why? Because it's easy, it’s versatile, and it gives me three nights' worth of different dinners with minimal effort.


I start by searing the beef in my favorite cast iron skillet. There’s just something about that perfect crust that locks in all the flavor and juices. Once that’s done, I toss the roast into my crockpot with some onions, garlic, carrots, small red potatoes, and celery. Then, I let it cook low and slow all day while I take care of the rest of my day.


The best part? The leftovers! After we enjoy a delicious beef roast dinner, I pull some of the leftover meat out to make tostadas or tacos the next night (who doesn’t love a good taco night?). By the third night, it’s time to turn whatever’s left into a comforting soup—perfect for using up all the remaining veggies too!

Three nights of hearty, delicious meals from one simple roast. That’s the kind of easy meal prep I live for!

Here’s how I make it:

Simple Beef Roast Recipe Serves: 6–8

Ingredients:

  • 3–4 lb. beef chuck roast

  • 2 tbsp olive oil

  • 1 large onion, sliced

  • 4 cloves garlic, minced

  • 4–5 carrots, peeled and cut into chunks

  • 6 small red potatoes, halved

  • 3 celery stalks, cut into chunks

  • 1 cup beef broth

  • Salt and pepper to taste

  • 1 tsp dried thyme

  • 1 tsp dried rosemary

Instructions:

  1. Sear the roast: Heat the olive oil in a cast iron skillet over medium-high heat. Season the roast generously with salt and pepper. Sear each side for 2–3 minutes until browned and a crust forms.

  2. Prep the crockpot: While the roast is searing, add the onion, garlic, carrots, potatoes, and celery to the bottom of your crockpot. Sprinkle in the thyme and rosemary.

  3. Add the roast: Place the seared beef roast on top of the vegetables. Pour the beef broth over the roast.

  4. Cook: Cover and cook on low for 8–9 hours (or on high for 4–5 hours) until the beef is tender and falls apart easily with a fork.

  5. Serve: Enjoy a classic beef roast dinner with the vegetables on the first night!

Now for the fun part—leftovers! Here’s how I turn the remaining beef into two more easy meals:

Night 2: Tostadas or Tacos

  • Shred some of the leftover beef and serve it on tostada shells or in taco tortillas. Add your favorite toppings like lettuce, salsa, avocado, or cheese.

Night 3: Hearty Beef Soup

  • Use the remaining beef and veggies to make a soup. Add any extra broth, a can of diced tomatoes, and some extra seasonings to taste. Simmer everything for about 20 minutes, and dinner is done!
